Couscous Salad with Pea Shoots & Parmesan

Pea Shoots & Parmesan Couscous Salad with bacon bits is a colorful and hearty side dish, or a light main course. This vibrant dish is packed with interesting textures and lovely flavors, and the resulting salad is an absolute joy to eat. And it’s fresh, healthy, delicious AND super easy and fast to prepare.
We all love a good couscous salad. The soft grains make a good alternative to the more typical salad carbs like pasta, while also making the dish more satiating. This is a great, quick recipe for a weekly meal prep.

  • 1 x 400 g Tin Peas
  • 150 g Bacon Bits
  • 60 g Tendril Leaf Pea shoots
  • 40 g Parmesan, grated

Dressing:

  • 45 ml Olive Oil
  • 30 ml Lemon Juice
  • 5 ml Honey
  • 5 ml Dijon Mustard
  • Salt & Pepper to taste

  2. Rinse the couscous and spread out in your salad bowl to dry (prevent it sticking together)
  3. Heat a pan on medium heat and fry the bacon bits until golden and crispy. Let it drain on a
    paper towel
  4. Assemble the salad in the following order: Pea Shoots, Couscous, peas, bacon, parmesan.
