Why the buzz about Microgreens?
For a long time microgreens has been farmed to service chefs in fine restaurants, as tasty garnish to complement signature dishes.
This industry has seen a rapid increase and most foodies and the health conscious, has either seen or heard about these super leafs.
But are these only pretty or is there more to them?
Microgreens are the baby leaf phase (first 4-6 leafs) in the development of herbs or vegetable seeds. Therefore the taste is quite concentrated and once use to it… you’ll never want to nibble on lettuce again.
As the seed grow from the sprouting phase the baby plant develops tons of vitamins and anti-oxidants. At this stage the roots has done its work and only the leafs and stems are used.
Nutritionists has classified microgreens as a superfood having between 10 – 40 times higher nutritional value as their adult plant.
Harvesting times of different microgreen- varieties differs. But the commonly used microgreens, like peashoots and sunflower will be ready to harvest within 2 weeks. They taste fresh and full of flavour.
